MATCH SALTY FOODS WITH SWEET WINES

Salty foods need an opposite wine to enhance their flavour.

Sweetness in a food is a perfect contrast to this sometimes harsh characteristic e.g. Stilton cheese is best macthed with a sweet wine such as Port.

On the opposite side of the spectrum, some salty foods can benefit from acidity. For example, olives and shellfish should be served with a crisp, dry white wine.

There is an exception to this rule, an odd one out. This is fino Sherry. This is classically served with olives and salted nuts and is a perfect match. Again, this goes back to regional cuisine matching as Jerez in Spain (where Sherry is made), also produces olives and salted almonds!
