MATCH INTENSELY FLAVOURED FOOD WITH INTENSE FLAVOURED WINE

MATCH SPICY FOODS TO SPICY GRAPE VARIETIES AND BLENDS

With such complex, flavourful food such as Chinese cuisine, a highly fruity and low tannin wine complements well.

Many spices and chillies are used within Thai, Indian and Mexican food, so chilled, cooling and fruity white wines (preferably unoaked) match very well, as well as rosés. Also, as this is intensely flavoured food, intensely flavoured wine is a perfect match e.g. Riesling. It is lightweight but not a delicate wine so matched well and won’t overpower the dish. Avoid oaked Chardonnay here!

Also, with spicy, Indian cusine, Merlot and spicy Shiraz work well as red wine suggested grape varieties. Avoid high alcohol and high tannin reds or you could be left with a burning mouth! This combination doesn’t work well. Spicy white wines like Gewurztraminer are a fantastic complement and also try Indian sparkling wine as well as Champagne.
