General Rules
- Match weights/richness of food and the body of the wine
- Match the flavour of both food and wine e.g. herbal, spicy, creamy
- Match acidic food with acidic wine
- Match sweet foods with sweet wine
- Match foods with their regional wine, if in doubt
- Match red meats with highly tannic red wines
- Match salty food with sweet, high acid wine (opposites attract here)
- Match spicy foods with spicy wines
- Match delicate food with delicate, fragrant wine.
- Do not drink highly tannic red wines with oily/salty foods. Drink high acid, white wines instead
- Think about your meal(dish) and it’s ingredients and then treat your wine like an additional flavour. This helps you to choose the best wine
- If cooking food in a wine based sauce, try and drink the same wine.
